Shawarma is the Arabic name for a method of preparing meat. The pieces of meat are put onto a large skewer and cooked by rotation in front of a flame. The meat is sliced into vertical strips to serve, similar to a doner kebab.
The seasoning contains allspice, black pepper, cinnamon, cardamom, cumin, coriander, nutmeg and mace.
These spices can also be mixed with oil as marinade for lamb kebabs.
