Tomato garlic and coriander salad

The freshest sun ripened tomatoes, zingy garlic with lemon and aromatic coriander. This versatile salad is a must for any mixed starters and is great with strong barbeque flavours.
200g cherry tomatoes
2 garlic cloves, peeled and crushed
a large handful of fresh coriander, roughly chopped
2 tbsp olive oil
2 tbsp lemon juice
salt and pepper, to taste
1. Slice the tomatoes in half and put in a bowl, add the crushed garlic, lemon juice, olive oil and chopped coriander. Mix well and season to taste.
2. Ideally leave to marinade at room temperature for about an hour.
3. Transfer to a serving plate and serve, as part of a mixed starter with some lovely warm bread to soak up the juices, or with grilled meat.
