Sweet Potato,Chickpea and Sultana Tagine

These warming flavours combine to make a hearty dish that everyone will enjoy. Easy to prepare.

400gm Sweet potato, peeled & chopped into chunks
1 large onion sliced
1tbsp olive oil
2 tsp of Vegetarian tagine spice mix
75gm sultana, soaked in boiling water
1 large can of chickpeas
300ml vegetable stock
2 tbsp honey

Salt and pepper to taste

  1. Heat the oven to 160 degrees. In a heavy based saucepan, fry the onions in the olive oil over a medium heat for about 10 minutes until coloured. Add the spice mix and cook for a further few minutes.
  2. Add the sweet potato, chickpeas and sultana’s and mix well cook for a few minutes. Add the vegetable stock and mix well.
  3. Transfer to a tagine, and put in the oven for 50 minutes. Then take out and add the honey, stir well. Put back in the oven for a further 20 minutes, if the tagine still has a lot of juice, put back in the oven without the lid.
    Salt and pepper to taste, don’t over stir as the sweet potatoes are very soft.
  4. Serve with lots of warm bread to soak up all the lovely sauce.
